Bún Riêu (Crab Tomato Noodle Soup)

Difficulty level: Easy 

Ingredients:

  • 3L water

  • 1 box (4 cubes) Bao Long bun rieu seasoning

  • 3 TBSP bun rieu cua spicy crab paste

  • 1 small can (160g) mince crab in spices

  • 1 small can crabmeat

  • 500g minced pork

  • 1 egg

  • 1 TSP sesame oil

  • 1 TSP Chinese cooking wine

  • ¼ cup chicken stock

  • 1 packet fish tofu

  • 8 tomatoes

  • 1 packet vermicelli noodles

  • Bean sprouts (handful)

  • Mint (small handful)

Instructions:

  • Boil 3L water in a large pot

  • Add 1 box (4 cubes) Bao Long bun rieu seasoning

  • Add 3 TBSP bun rieu cua spicy crab paste

  • Add 1 small can (160g) mince crab in spices

  • Simmer on medium heat

  • Remove foam developing on top of the soup

  • Drain 1 small can crabmeat and add into the soup

  • To make meatballs, mix 500g minced pork, 1 beaten egg, 1 TSP sesame oil, 1 TSP Chinese cooking wine, ¼ cup chicken stock

  • Use a tablespoon to scoop and drop the meatball mixture into the soup

  • Add a packet of frozen fish tofu into the soup

  • Simmer for at least 10 minutes

  • Cut 8 tomatoes in quarters and add to the soup

  • Simmer for one minute

  • To serve, place vermicelli noodles in bowl and cover with bun rieu soup

  • Top with bean sprouts and mint
