Ginger Soy Steamed Fish

Ingredients:
1 whole snapper or branzino fish
2 inch ginger
½ cup chicken stock
1 TBSP sugar
1 TBSP Chinese cooking wine
2 TBSP light soy sauce
1 TSP sesame oil
Salt (to rub fish)
Cilantro (to garnish)
Instructions:
The fish will be steamed in a delicious sauce. To create the sauce, mix together:
½ cup chicken stock
1 TBSP sugar
1 TBSP chinese cooking wine
2 TBSP light soy sauce
1 TSP sesame oil
Peel and chop ginger into matchstick-size pieces
Dry fish by patting it with a paper towel on both sides
Cut three slits on each side of the fish
Rub salt in and around the fish
Place the fish into low bowl
Cover the fish with chopped ginger
Pour the sauce over the fish
Steam fish for approx. 8-10 minutes
Garnish with cilantro
