Malaysian Bak Kut Teh (Herbal Pork Rib Soup)

Ingredients:

  • 1.5L water

  • Claypot Klang Traditional Herbal Broth (contains 2 tea bags)

  • 3 whole garlic bulbs

  • ½ pound pork spare ribs

  • ½ pound of pork shoulder

  • ~ 10 shiitake mushrooms

  • ~ 10 fried tofu puffs 

Instructions:

  • Boil 1.5L water in a pot

  • Add Claypot Klang Traditional Herbal Broth tea bags

  • Add 3 whole garlic bulbs

  • Boil this “tea broth” for 30 minutes

  • Add to slow cooker:

    • ½ pound of pork spare ribs (cut up into pieces)

    • ½ pound of pork shoulder (cut up into chunks)

(Tip: For a clearer soup, boil out impurities of the meat before adding to slow cooker)

  • Discard garlic and tea bags. Add the remaining “tea broth” to slow cooker with the meat.

  • Slow cook on HIGH for 2 hours

  • After 1.5 hours, add around 10 shiitake mushrooms and 10 fried tofu puffs

  • After 2 hours, add 1 TBSP sweet soy sauce, 1 TBSP light soy sauce and 1 TBSP oyster sauce

  • Serve with rice
