Thai Chili Garlic Minced Pork

Difficulty level: Easy 

Ingredients:

  • 3 garlic cloves

  • 3 chilies

  • 8 kaffir lime leaves

  • ½ can bamboo shoots (~100g)

  • 2 TBSP oil

  • ½ pound minced pork

  • 1 TSP sweet soy sauce

  • 1 TSP fish sauce

  • 1 TBSP oyster sauce

 Instructions:

  • Chop 3 garlic cloves into small pieces and for greater flavor, use the flat end of the knife to crush the garlic pieces

  • Slice up 3 chilis. Remove chili seeds if you don’t like too much spice

  • Tear the 8 kaffir lime leaves in half discarding the middle vein

  • Drain ½ can of bamboo shoots and soak in boiling water for 20 minutes. After soaking, slice into thin pieces

  • Place 2 TSBP of oil into a pan and when the oil is hot, add garlic and chili

  • Stir fry garlic and chili for 1-2 minutes until fragrant, but don’t burn the garlic!

  • Add  ½ pound minced pork and stir fry until brown

  • Add 1 TSP of sweet soy sauce, 1 TSP fish sauce and 1 TBSP oyster sauce

  • Add sliced bamboo shoots

  • Add kaffir lime leaves

  • Stir fry until mixed in

  • Serve with rice
