Thai Chili Garlic Minced Pork

Ingredients:
3 garlic cloves
3 chilies
8 kaffir lime leaves
½ can bamboo shoots (~100g)
2 TBSP oil
½ pound minced pork
1 TSP sweet soy sauce
1 TSP fish sauce
1 TBSP oyster sauce
Instructions:
Chop 3 garlic cloves into small pieces and for greater flavor, use the flat end of the knife to crush the garlic pieces
Slice up 3 chilis. Remove chili seeds if you don’t like too much spice
Tear the 8 kaffir lime leaves in half discarding the middle vein
Drain ½ can of bamboo shoots and soak in boiling water for 20 minutes. After soaking, slice into thin pieces
Place 2 TSBP of oil into a pan and when the oil is hot, add garlic and chili
Stir fry garlic and chili for 1-2 minutes until fragrant, but don’t burn the garlic!
Add ½ pound minced pork and stir fry until brown
Add 1 TSP of sweet soy sauce, 1 TSP fish sauce and 1 TBSP oyster sauce
Add sliced bamboo shoots
Add kaffir lime leaves
Stir fry until mixed in
Serve with rice
