Chicken Laksa

Cuisine: Malaysian / Singaporean 

Difficulty level: Easy

Serves: 2-3 

Ingredients:

  • 1 packet Prima Taste Laksa kit (including premix and laksa paste)

  • 800ML water

  • ½ TSP sugar

  • 1 TSP fish sauce

  • 1 bunch bok choy

  • 2 or 3 eggs

  • 1 packet egg noodles

  • 1 packet vermicelli rice noodles

  • 8 cubes frozen fish tofu or any other tofu or fishball

  • ½ roast chicken

Instructions:

  • Pour 800ML of water into a pot

  • Whisk in Laksa Premix packet

  • Whisk in Laksa Paste packet

  • Bring to a boil and reduce to a medium heat

  • Add in ½ TSP sugar

  • Add in 1 TSP fish sauce

  • Add in 8 cubes of frozen fish tofu

  • Cook egg noodles and rice vermicelli noodle as per packet instructions

  • Tear apart roast chicken. Heat if needed

  • Blanch 1 bunch of bok choy

  • To assemble each bowl per person:

    • Add noodles into a big bowl

    • Add in chicken pieces

    • Cover with laksa soup and fish tofu pieces

    • Top with bok choy and a hard boiled egg (sliced in half)
