Japanese Miso Eggplant

Ingredients:

  • 4 Japanese Eggplants

  • 50ml Mirin

  • 100g Sweet Miso

  • 1 TSP sugar

Instructions:

  • Cut eggplants in half lengthwise

  • Score eggplants by making diagonal cuts

  • To make miso sauce, mix in 50ml mirin, 100g sweet miso, and 1 TSP sugar

  • Steam eggplant for 4 minutes

  • Cover the scored eggplant with the miso sauce

  • Broil or grill for 4 minutes
