Ingredients:
Marinated Beef:
½ pound beef
2 TBSP sweet soy sauce
½ TBSP sesame oil
½ TBSP Mirin
1 clove garlic, minced
Vegetables and egg omelette:
2 eggs, beaten
1 onion
1 carrot
1 red bell pepper (capsicum)
6 shiitake mushrooms
400g spinach
250g Korean sweet potato noodles
Noodle sauce:
1/3 cup sweet soy sauce
1/3 cup light soy sauce
2 TBSP sesame oil
1/3 cup honey
1 TSP black pepper
Instructions:
Slice beef and marinate in 2 TBSP sweet soy sauce, ½ TBSP sesame oil, ½ TBSP mirin and 1 clove of minced garlic. Rest aside to marinate while you prepare the vegetables
Finely slice the vegetables including 1 onion, 1 carrot, 1 red bell pepper (capsicum) and 6 shiitake mushrooms
Add 1 TBSP of oil and saute onion. Rest aside
Add 1 TBSP of oil and saute carrots. Rest aside with onion
Add 1 TBSP of oil and saute the red bell pepper (capsicum). Rest aside with onions and carrots
Add 1 TBSP of oil and saute shiitake mushrooms. Rest aside with the other vegetables
Add 1 TBSP of oil and stir fry the beef until brown. Rest aside with the other vegetables.
Place approx. 400g of spinach into boiling water for 10 seconds and then immediately place the spinach into a bowl of cold water. Squeeze the water out of the spinach and rest aside with the other vegetables.
To make an egg omelette, lightly beat 2 eggs. Add 1 TBSP of oil into a pan and add beaten eggs so that it forms a thin layer. Cook on medium heat. Cook on each side for a few minutes. Remove from pan and slice into thin pieces. Rest aside with the meat and vegetables.
To make the noodle sauce, combine 1/3 cup light soy sauce, 1/3 cup sweet soy sauce, 2 TBSP sesame oil, 1/3 cup honey and a generous amount of black pepper (~ 1 TSP). Ensure the honey is mixed into the sauce.
Boil Korean sweet potato noodles for 9 minutes or as per packet instructions. Drain noodles.
Pour half of the noodle sauce into the noodles and mix together.
Place noodles on top of the meat, vegetables and egg omelette. Use your hands to mix all the ingredients thoroughly together.
Pour in the rest of the noodle sauce and mix together.
Note: Use gloves when mixing noodles with your hands to protect your hands from the heat. Otherwise, use tongs!
