Cà Ri Gà (Vietnamese Chicken Curry)

Ingredients:
1 kg chicken thigh pieces (with bone and skin)
4 TSP salt
3 large potatoes
2 cloves garlic
1.5 TBSP curry powder
1 can coconut cream
1 can Singapore curry sauce (e.g. Yeo's brand)
2 TSP vegetable stock
Cooking oil (any type)
Instructions
Cover chicken thigh with 1 teaspoon salt
Mix in 1 tablespoon of curry powder and rest for 30 minutes
Cut up 3 large potatoes. Cover in water and 1 teaspoon salt and mix together.
Add 2 cloves of minced garlic to a hot pan with 1 tablespoon oil
Fry chicken for 10 minutes
Set chicken aside in a large pot
Drain potatoes and add 1/2 tablespoon curry powder and mix together
Stir fry potatoes for 5 minutes
In the pot of chicken, add 500ml water
Add potatoes
Add 1 can (400ml) Singapore curry sauce
Add 1 can (400ml) coconut cream
Add 2 teaspoon salt
Add 2 teaspoon vegetable stock
Simmer for 30 minutes
Serve with vermicelli noodles or rice
