Cà Ri Gà (Vietnamese Chicken Curry)

Serves: 5

Ingredients:

  • 1 kg chicken thigh pieces (with bone and skin)

  • 4 TSP salt

  • 3 large potatoes

  • 2 cloves garlic

  • 1.5 TBSP curry powder

  • 1 can coconut cream

  • 1 can Singapore curry sauce (e.g. Yeo's brand)

  • 2 TSP vegetable stock

  • Cooking oil (any type)

Instructions

  • Cover chicken thigh with 1 teaspoon salt

  • Mix in 1 tablespoon of curry powder and rest for 30 minutes

  • Cut up 3 large potatoes. Cover in water and 1 teaspoon salt and mix together.

  • Add 2 cloves of minced garlic to a hot pan with 1 tablespoon oil

  • Fry chicken for 10 minutes

  • Set chicken aside in a large pot

  • Drain potatoes and add 1/2 tablespoon curry powder and mix together

  • Stir fry potatoes for 5 minutes

  • In the pot of chicken, add 500ml water

  • Add potatoes

  • Add 1 can (400ml) Singapore curry sauce

  • Add 1 can (400ml) coconut cream

  • Add 2 teaspoon salt

  • Add 2 teaspoon vegetable stock

  • Simmer for 30 minutes

  • Serve with vermicelli noodles or rice
